Soph, that's a complaint by recent grads heard all the time in this world.
You have to beat your way past the HR folk and get to the interview. That's why people somewhat 'hedge' on their resume's. *GET the interview* because at that point you can demonstrate your knowledge in person. ANY school experience/projects that you have done you should reflect as practical knowledge
It's a high stakes game now more than ever, so brace yourself.
Are any of the companies in your field, bigger ones, looking for interns? Even if it's unpaid, they often turn into perm positions with the company and it's more practical experience. Useless up front for paying bills, valuable later. Also, can you use any of your knowledge to volunteer at non-profits? It looks good on your res even if you just help out a couple hours a week for a few months. I wish you sincere luck in finding any kind of work right now. It's very tough and it might get even tougher. And don't be afraid to apply to jobs that aren't specific to the degree itself. ANY knowledge you gained in college can probably be spread across several markets.
Also, if you can get a clean background check to obtain security clearances and can work overseas you might get scooped up quicker. Find some forums, if they exist, online where experienced pros are in your field and ask them questions and state your situation. You just never know who knows whom.
You didn't ask for my advice and I hope I'm not overstepping my bounds, but I know how tough it can be and want to encourage you.

I HATE MY TELEPHONE AND I'M NEVER BUYING THIS MODEL AGAIN FOR THE REST OF MY DAYS!!!!!!!!!!!!!
I've replaced the 'rechargable' battery twice in it and it still only lasts for about an hour and that's AFTER sitting in the cradle/charger all night long!
GRRRRRRRRRRRRR!!

wow...if I just turn on caps lock it doesn't have the emotional force of pressing down shift while I type. it's like the difference between using a microphone and shouting.
I AM SO ANGRY ABOUT SOMETHING THAT HAS NOTHING TO DO WITH ME.
I don't even usually get angry about anything, and I understand that indifference is just as evil as the evil I'm indifferent about, but I usually can't get this emotional energy stirred up.
figures it would happen over something so basically stupid, but I actually feel HATE toward a person right now. HATE. toward a person who is not alive and died in a pretty miserable way. I am usually a big champion of forgiveness, and it comes easily to me, but JUST THE THOUGHT OF THIS PERSON IS MAKING ME FURIOUS!!!!!!!

and NO it doesn't make you sound terrible. i've had some pretty fuck-your-life-around-for-the-helluva-it people in my life, and as far as I know they're still going strong...and i do have my ARRRGGHHHH days about them.
